Gut-Supporting Homemade Marshmallows

The perfect way to brighten up your functional mushroom hot chocolate, with even more gut-supporting ingredients.
Ingredients

1 Tbsp marshmallow root powder (optional)

½ cup warm water

¼ cup gelatin powder

1 cup honey or raw sugar

2 tsp vanilla extract

To dust (optional)

2 Tbsp icing sugar

2 Tbsp cornstarch

Method
  1. If using marshmallow root powder, mix together warm water and powder in a bowl and set aside for 5 minutes. Strain and measure out 2 ¼ cup portions.
  2. Pour ¼ cup of the prepared marshmallow water mixture (or ¼ cup warm water) into the bowl of a stand mixer and add gelatin. Mix to incorporate then set aside.
  3. In a small pot, add remaining measure of water, honey/ sugar and continue to mix over a medium heat, bringing to a gentle boil over a medium heat, without stirring and continue to cook until the temperature on a thermometer reaches 115°C. This should take 10-15 minutes. Remove from heat.
  4. Coming back to the stand mixer, begin to slowly mix the gelatin mixture whilst gradually adding the sweetened water mixture and vanilla. Once sweetened mixture is added, turn the mixer to high and mix for another 5-10 minutes, or until soft peaks form.
  5. Line a medium baking dish with baking paper then spread marshmallow evenly into the dish. Allow to set at room temperature for at least 4 hours before cutting into chunky squares with a hot knife tip (run under hot water before cutting). Mix together icing sugar and cornstarch in a bowl and toss marshmallows in to coat.
  6. Store in an air-tight container at room temperature. Enjoy as a treat, or with a functional mushroom hot chocolate using the PM Blend.
